Cocuy

An agave spirit from the hills between Lara and Falcón; cocuy from Siquisique is distinct from that of Pecaya. In 2019, Lara's producers were applying for their own designation of origin.[10][16]

A day-old arepa (corn cake) fried with a cheese filling and served with pata 'e grillo, chicharrón (fried pork rind), caraotas (black beans), tajadas (fried ripe plantain) and salad.[9][10]

Mondongo de chivo

A thick goat soup of head, backbone and offal with corn, potato and seasonings, simmered for many hours. In Carora it is a Sunday custom.[9][10][11]

Pan de tunja

A small, round sweet bread from El Tocuyo's traditional bakeries. Its origin is disputed: one source dates it to El Tocuyo since 1560, and another thinks the name comes from Tunja, in Colombia.[4][13]

Empanada de pabellón

An empanada filled with shredded beef, black beans, fried plantain and cheese. It was created in Barquisimeto by Oscar Castellano and Teresa Buitrago, of “Oscar y Teresita,” in the late '70s.[1][4][5]

A meat sandwich on a long roll, born in 1983 in a trailer on the “calles del hambre” (hunger streets, the late-night food strips). It is recognized as gastronomic heritage of Iribarren municipality.[1][4][6][7]

The aromas of home. Lara's cooking smells of ají dulce rosita (a mild sweet pepper), oregano from Pavía and cumin.[1]

More documented recipes. Goat hallacas, cochino en dulce (sweet-braised pork), conserva de buche (candied tripe), mantequilla de caraota (black-bean butter), mojo de semilla de auyama (pumpkin-seed sauce), mutton stew and caldo de leche (milk broth), according to the inventory by food chronicler Miro Popić.[8]

To drink. Caratillo de arroz (a fermented rice drink), guarapo de papelón with cinnamon (raw-sugar drink), mamonada caroreña (a mamón-fruit drink from Carora) and seasoned sueros.[10][17]
